Centered around alpine cuisine, where we make our food from scratch. Position is Line Cook (Commis Chef), where you'll be responsible for executing a specific or multiple line stations during service hours. If you have a passion for global cuisine and a love for learning, this is the job for you. Essential Functions and Major Responsibilities :Prepare ingredients by chopping vegetables, butchering meat, or preparing sauces.Ensures all prep is done according to recipes and portion standards. Work in close liaison with chef.Cooking and Assembling Dishes - Cooks menu items in cooperation with the rest of the kitchen staff. Assembles dishes with attention to presentation and quality.Maintains a clean and organized workstation.Follows sanitation and safety procedures to ensure a hygienic kitchen environment.Must be willing to work with both the Back of House and Front of House teams. Secondary Responsibilities :Must become knowledgeable of Schweitzer Mountain Resort facilities & services Other duties as assigned Specific Job Skills : License/Certifications - Idaho Food Safety Certification is preferred Technical -Knife Skills Knife Sharpening/Upkeep Sauteing, Searing, Grilling, Braising, Frying, Roasting Reducing, Simmering Open Flame Cooking, Sou Vide Proper/Safe Food Storage, Temperature Control, Proper/Safe Reheating Brines, Pickling The 5 Mother Sauces Physical Capabilities - Ability to stand and walk for up to 8 hours per shift. Will lift up to 25lbs frequently, up to 50lbs occasionally. Exposed to fumes, odors, mechanical and burn hazards.
